Hermits (Biscuits (or Cookies, if you prefer))

Hermits (Biscuit/Cookie)

 

8 oz granulated sugar

4 oz butter

4 fl oz milk

8 oz plain flour

1 teaspoon allspice

½ teaspoon bicarbonate of soda

½ teaspoon cream of tartar

3 oz raisins

 

Cream the butter and sugar together until pale and fluffy, then gradually beat in the milk.  Sift together the flour, allspice, bicarbonate of soda, and cream of tartar.  Add the flour mixture to the butter mixture, beating well after each addition until the batter is smooth.  Add the raisins (chop if they are large) to the batter.  Drop by teaspoon onto greased baking sheets, spacing them well apart.  Bake in an oven preheated to 375 F for 12-15 minutes.  Allow to cool slightly before moving them to a wire tray to cool completely. (that is if you can keep from sampling them!)

When I was a child, I remember the adults talking about “Hermits”. Just like a kid, “Hermits” were too exotic sounding for my taste (even though I hadn’t tasted them!). I stuck with Toll House, Sand Tarts and Peppernuts that I knew! Well, now I know Hermits, and love them!!
