Gingerbread Cake

Gingerbread Cake

 

Ingredients:

1 cup butter

3 eggs

2 cups granulated sugar

1 cup dark molasses

¼ cup freshly grated ginger root

a dash of cloves

1 teaspoon baking soda

1 cup buttermilk

1 teaspoon cinnamon

3 to 3 1/2 cups flour

 

Method:

Mix soda and buttermilk and set aside.  Cream butter and sugar and add the eggs and molasses.  Add the spices and freshly grated ginger root.  Add the buttermilk and flour, alternately.  Bake in greased and floured baking pans (approximately three 9-inch pans).  Bake at 350 degrees until done, approximately 30 to 35 minutes.
